Product Description

Pectin is a kind of polysaccharide, which consists of homogeneous polysaccharide and heteropolysaccharide. They mostly exist in the cell wall and inner layer of plants, and a large number of them exist in the peel of citrus, lemon, grapefruit and so on. It is white to yellow powder, with a relative molecular weight of about 20000 ~ 400000, tasteless. It is more stable in acidic solution than in alkaline solution. It is usually divided into high ester pectin and low ester pectin according to its degree of esterification. High ester pectin forms a non reversible gel in the range of soluble sugar content greater than 60% and pH=2.6 to 3.4. Low ester pectin, a part of methyl ester, is converted to primary amide, which is not affected by sugar and acid, but it needs to combine with two valence ions such as calcium and magnesium to form gel.

The main raw materials for commercial production of pectin are citrus peel and apple peel. Pectin resources are rich, but the processing and utilization rate is low.
